Choral Notes for the period beginning 12/25 thru 1/04
Rehearsals:

* Location: wherever
* Time: beginning to end
* Attire: whatever
* Music: anything goes (although Haydn is a favorite :))
* Cost: free
* Performance: on demand
Take note and read carefully before attempting:
Peppermint Bark Fudge (Thank you Jenn and Sean Myers!)
Prep. Time = about 1 hour
Ingredients:
48 oz. white chocolate chips
1 oz. (1 bottle) peppermint extract
¼ - ½ cup almond oil (I found this at Publix)
48 oz. dark-chocolate-chips (Jenn/Sean use Ghirardelli 60%)
2 Tablespoons (1 oz.) instant coffee powder
4 x 14 oz. cans sweetened condensed milk
Peppermint/candy cane crumbles
Directions:
1. Line 2 cookie sheets with parchment or wax paper
2. In a double boiler or saucepan, combine white chocolate and peppermint
extract. Melt over low heat, stirring often. Add almond oil as needed, in
small amounts, stirring each addition in completely to keep chocolate
smooth.
3. Divide melted white chocolate between the 2 cookie sheets. Using a
rubber spatula, smooth evenly to cover the cookie sheet. Place in freezer or
cool place to set.
4. Warm condensed milk and instant coffee in a double boiler/saucepan
over low heat. Add 60% chocolate chips; melt, stirring often. DO NOT ALLOW
TO BURN.
5. When melted smooth, divide between the 2 cookie sheets. Smooth over
the white chocolate.
6. Sprinkle peppermint crumbles over the chocolate. (Make crumbles by
destroying candy canes with a blunt instrument! Worked for me. :)) Allow
to set in a cool place.
7. Cut, enjoy, share.
Jenn surprised the Messiah choir by bringing a plate piled high with her
homemade Peppermint Bark Fudge you could not just eat one! Thank you,
